It's made with goat's milk, but then to up the decadence, she adds some cow's cream. When young Kunik is mild and buttery with a tangy, crme fraiche flavor, as it ripens, it develops notes of mushroom and earth and more assertive goat flavor. Each piece is at least 1 2lb.
