Farmed on organic principles, hand picked, hand pruned, unirrigated. Mixed clay topsoil over a limestone base. Natural yeast fermentation Matured in a neutral vessel on fermentation lees for 10 months. Unfined and unfiltered. 90 dozen produced. Vinified with the help of James Thomas at Heroes Vineyard. Best enjoyed with a gentle chill. Tasting
